Ingredients
1 carrot, coarsely shredded
½ jar of Doux South Chow Chow, with the brine
¼ cup of rice wine vinegar
2 tsp of honey
1 jalapeno, halved, seeded, and julienned
2 T minced mint
1 T minced cilantro
2 T minced basil
salt and pepper
Mix all ingredients together and let marinate in the refrigerator for 10-15 minutes before serving.
