3 tablespoons olive oil

6 large eggs

3 tablespoons finely grated Parmesan

1 garlic clove, minced

1/4 teaspoon of salt

1/4 teaspoon of white pepper

8 Doux South® Drunken Tomatoes



Heat oven to 375 degrees

Crack eggs into a large bowl, add parmesan, salt, and pepper and whip until nice and frothy.

Place olive oil in a non-stick sauté pan and bring to a medium high heat.

Add garlic to olive oil and sauté until it begins to turn a light golden color, about 1 minute.

Pour egg mixture into hot pan.

With rubber spatula, slowly bring the sides of the eggs towards the center of the pan, rotating around the pan.

Dot the top of the frittata w/ Drunken Tomatoes and put in the oven.

Bake for approximately 8-10 minutes or until middle of the frittata is set.

Once finished, let frittata sit for approximately 5-8 minutes, then loosen the edges with your non-stick spatula and shimmy it from your pan to a cutting board.

Cut into wedges and enjoy with a green salad dressed with your Drunken Tomato Vinaigrette.
