Drunken Tomato Salsa

16 oz. Doux South® Drunken Tomatoes, crushed

4-5   scallions, white and green parts, thinly sliced

2-3   Serrano Chiles, thinly sliced into rounds

4   teaspoons fresh ginger, grated

1   tablespoon minced garlic

2  teaspoons yellow mustard seeds

2   teaspoons cracked black peppercorns

2   teaspoons ground cumin

1   teaspoon cayenne

½   teaspoon turmeric

½   cup extra-virgin olive oil

  1. In a large bowl, toss Drunken Tomatoes with scallions and Serrano Chilies.
  2. In a medium sauté pan, stir in ginger, garlic, mustard seeds, cracked peppercorns, cumin, cayenne, and turmeric. Sauté just until the aromas are released, about 2 minutes.
  3. Remove from heat and stir into the tomato mixture and cover with plastic wrap for 3-4 hours.
  4. Serve with your favorite tortilla chip.
