Little Rock Succotash
2 C Applewood smoked bacon, diced
4 C chicken/ham stock
3 C peeled and crushed Drunken Tomatoes
1 ½ C lima beans
3 C Little Rock Caviar
1 ½ C corn
1 medium green bell pepper, chopped
1 medium onion chopped
½ tsp fresh basil, chiffonade
½ tsp fresh mint, chiffonade
1 tsp smoked paprika
½ tsp cracked black pepper
1 bay leaf
1 C sliced okra
In a large saute pan, with a touch of oil, add diced bacon and cook until slightly crispy.
Add the tomatoes, beans, peas, corn, green pepper, onion, caviar, and seasonings. Simmer, uncovered, for 15-20 minutes.
Add okra; simmer, uncovered, 15 minutes longer.
Discard bay leaf before serving.
